OMG, y’all. I have a really tasty dinner menu plan to share with you this week!
You ready for some meal planning inspiration? Let’s dive right in!
Sunday: We are going out for pizza tonight to celebrate my nephew and Adler’s birthdays! (Does every family have a copious amount of October birthdays or is it just us?)
Monday: I’ve been meaning to make butternut squash soup this fall (ahem, it’s even on my Fall Bucket List), so I was super thrilled to find this Skinnytaste slow-cooker recipe that requires no peeling! Get the recipe here. I think I’ll make grilled cheese sandwiches to go with this. Yum! Are you hungry yet?
(Taco) Tuesday: I’m going to make this new (to me) carnitas recipe by Diana Kennedy this week (get the recipe here) and I’m already drooling over it. While reading an article on Smitten Kitchen, I came across this Diana Kennedy recipe. Here’s what Deb over at SK had to say about this recipe,
“You could have knocked me over with a feather when I learned that one of the most famous recipes for carnitas has but three ingredients: pork, water and salt. Three!…But wait, there’s more: not only do you only need three ingredients to make carnitas, the cooking technique is kind of brilliant. The meat braises in the water and salt (this is the tenderizing part) for a few hours and then, once the water cooks off, it fries itself in its own rendered fat (thus creating those addictive crisp ends).”
Obviously, I have to try making these carnitas for our #TacoTuesday night this week. I’ll try to remember to post about their (suspected) amazing-ness over on Instagram.
Wednesday: You guys probably know by now that I’m a mega-fan of all kinds of Mexican and Tex-Mex inspired foods. So consider yourself warned that you may see back-to-back Tex-Mex dinner plans (like this week) because I’m a grown up woman and I do what I want. ;-) I’ll be doing these baked shrimp taquitos from Skinnytaste. I plan to make guacamole for a side served with sliced bell peppers and tortillas chips.
Thursday: I’m going to try out this Indian-inspired butter chicken slow cooker recipe from The Lemon Bowl. My hubby and I are both big fans of butter chicken and we usually only have it when we eat out at Bombay Cuisine here in GR. I’m excited to try this out! You can get the recipe here.
Friday – Sunday: No meal planning for me this weekend…we already have a full schedule of meals out and things planned. And I’m not complaining one bit!
